2021 Cabernet Sauvignon
The 2021 Cabernet Sauvignon is sourced from Bacchus (20%), Dionysus (20%), and Weinbau (40%) vineyards, all located in the White Bluffs AVA, and from the Southwind Vineyard (20%), located in the Walla Walla AVA. It was aged 28 months in French Oak, 25% of it was new, and 75% was neutral oak. It is a blend of 80% Cabernet Sauvignon, and 20% Cabernet Franc, leading to a nicely balance wine, with an aromatic nose and pleasant finish.
The tannins and acidity in this wine are deliciously balanced. Expect aromas of graphite, cedar, and eucalyptus; although dark fruit dominates, with flavors of black cherry, plum, and blackberry. Nuanced hints of vanilla, cinnamon, and toast tones.
This wine would pair well with a nice juicy steak, simply seasoned with salt and pepper, lamb skewers, or a nice charcuterie plate. For a treat, try it with a juicy cheeseburger.
